Interesting stuff. I think the decline of the celebrity is apparent in how influencers now can wield more clout than the current batch of movie stars. It marks a shift in our culture that has broken away from the monoculture of years past into various clusters of fanatical subcultures, even to the point where we have nearly two separate countries operating in the same physical space with the political left and right (as loose categories).
Also I think this is one of the reasons Hollywood is in massive decline, because it became highly reliant on celebrity draws for attention. Now they can't produce any major new celebrities to power their films and they get outmaneuvered by influencers and smaller affinity groups.
As for whether the current Pope is a celebrity, I would say it depends on the definition. I think the definition you gave is imperfect because there's seems to be a connection between celebrity status and entertainment, or at least some kind of sensationalism. You gotta gain fans quickly and easily to be a celebrity and it doesn't seem the Pope is very good at that.

No to influence. Francis is a "celebrity" to the extent that a lot of his speech and actions are celebrated by the global MSM.
